Who’s in the mood for Fall?

Last week we had enough cool mornings to inspire us to dig out the pumpkins and fall decor. Today I’m gathering all our comforting + fun fall recipes and dreaming of open windows and falling leaves.

There’s something extra cozy about a slow-cooked meal, don’t you think? A one-pot meal that sits on the stove all day, simmering and filling the house with delicious hints of dinner.

This classic is a favorite in our house– Chicken Noodle Soup. You can let it simmer for hours, or you can make the quick version using a rotisserie chicken. Serve it up with sourdough, crackers, or cheese toast and you’ve got a weekend winner– with leftovers. And obviously, a go-to when anyone in the house is under the weather.

We had the most fun hosting this Outdoor Movie Party last year. We’d been sheltering in place for 2000 months so our entertainment threshold was low. But it really was fun– friends, snacks, fresh air, popcorn, (more) screen time, and these Yummy Sugar Cookies.

Grandma’s Pot Roast is another family favorite. The smell of this cooking takes me right back to my grandma’s avocado green kitchen, just after church on a cold day where we’d gather for this favorite meal for “dinner.” (Because in the South, lunch is dinner and dinner is supper.)

And I love how simple it is. The short version: 1. Gather the ingredients. 2. Dump in the crock pot. 3. Turn on crock pot.

Y’all can do this.

I made my Mom’s Apple Crisp in these mini skillets– so cute and fun. Why is everything better in mini portions? You can also make it a casserole dish and it’s just as good. Butttt….there’s nothing like warm, cinnamon-brown-sugary-apple-deliciousness desserts in individual cast iron skillets with a mini scoop of vanilla bean ice cream on top.

Go eat it on the porch and watch the leaves fall. I promise it will taste even better.

I hope you didn’t scroll down and go, “ugh, salad!” Because this isn’t just salad– it’s a Fall Salad with buttercrunch lettuce + pomegranate arils + pine nuts + thinly sliced Honeycrisp apples and goat cheese. It’s a delicious, full-flavored taste of autumn– add grilled chicken and it’s a healthy, gourmet-ish meal. And the Champagne Vinaigrette is so yummy you’ll want to dip your french fries in it.

With school starting, add these Spinach Stuffed Shells to your rotation– an easy, hearty make-ahead meal. I also share an easy way to make some and freeze some. Top with marinara and serve with a salad and garlic bread.

This is a really easy, satisfying weekend meal– Best Crispy Pan Pizza. Making the pizza crust is a lot easier than you might think. And the iron skillet and cheese trick makes it crispy and oh-so-delish! Add your favorite toppings.

How about a savory Rosemary + Cheddar Scone for a Saturday morning brunch on the porch? Show up in your best weekend loungewear–I’ll bring the warm tea and sunshine. Another good one to share with friends.

Remember my pot roast directions– dump in the ingredients and turn on the crock-pot? Here’s a similar recipe for Taco Soup, and it makes enough for a crowd. Great for fall game nights. Add fresh guac, cheese, sour cream and chips.
